Ingredients
For the Whipped Feta
- 200g feta cheese, crumbled
- 100g Greek yogurt
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 small garlic clove, minced
- Freshly ground black pepper
For the Grilled Olives
- 1 cup mixed olives (green and black)
- 1 tbsp extra virgin olive oil
- ½ tsp dried oregano
- ¼ tsp chili flakes (optional)
- Zest of ½ lemon
To Serve
- Toasted pita or crusty bread
- Fresh herbs (parsley, mint, or dill)
- Extra olive oil for drizzling
Instructions
1. Make the Whipped Feta
Add the feta, Greek yogurt, olive oil, lemon juice, garlic, and pepper to a food processor.
Blend until smooth and fluffy, scraping down the sides as needed. If too thick, add a little more yogurt or olive oil.
2. Grill the Olives
Toss olives with olive oil, oregano, and chili flakes.
- Grill in a grill pan or skillet over medium-high heat for 3–5 minutes.
- Turn occasionally until lightly blistered and warmed through.
Remove from heat and toss with lemon zest.
3. Assemble
- Spread the whipped feta onto a serving plate or shallow bowl.
- Spoon the warm grilled olives over the top.
- Drizzle with extra olive oil.
- Finish with chopped fresh herbs.
